Cinnamon Mornings and Chocolate Dreams

Ingredients: Part 1: 6 cups rolled oats 1 cup wheat germ 1 cup salted sunflower seeds 1 cup (plus more as you wish) chopped pecans and/or walnuts 1/8 cup Cinnamon Part 2: ½ cup canola oil ¼ cup honey ¼ cup brown sugar 2 Tbsp vanilla Part 3: ¼ cup Coconut 1 cup raisins Assorted chopped dried currants, cranberries, apricots, bananas, dates, papaya, etc. (Hint: you can buy fruit-only trail mix and chop that up) Instructions: Preheat oven to 325 degrees. Mix Part 1 ingredients together in a large roasting pan and sprinkle heavily with the cinnamon. Mix Part 2 ingredients in measuring cup and heat in a microwave for 50 seconds. Before pouring over dry mixture, stir vanilla into oil-honey mixture. Pour over the dry mixture and bake for 40 minutes, stirring every 10 minutes. After baking, add dried fruit, e.g. raisins, apricots, dates, raspberries. Guests enjoy this tasty and healthy granola before a long day of gallery or mountain trekking. |
