Cinnamon Mornings and Chocolate Dreams

Ingredients:
16 eggs
1 tsp nutmeg
dash salt, dash pepper
1 Tbsp parsley (fresh or dried)
1/4 cup finely chopped scallions
1/2 cup sour cream
8-12 fresh mushrooms, sliced (optional)
2 cups grated sharp cheddar cheese

Instructions:
Beat eggs, adding nutmeg, salt, pepper, parsley, scallions. Scramble in skillet. Place Scrambled eggs in greased baking dish (I use two 9 inch by 5 inch by 3 inch high baking dishes) as first layer. Now layer sour cream, scallions, mushrooms, and cheese. Cover and refrigerate overnight. Bake in a 325 degree F preheated oven for 30 minutes.

Note: This is a versatile recipe. I change it according to the season. I use Vidalia onions in the summer instead of scallions. Dillweed instead of parsley. Cottage Cheese instead of Sour Cream. Vary the cheese e.g. blue cheese, parmesan, mozzarella.
