Ingredients:
1/2 lb fresh lake trout fillets
1/2 lb fresh whitefish fillets
3/4 cup fresh lime juice
1/4 cup fresh lemon juice
1/2 tsp salt
1/4 cup chopped onion
1/4 cup chopped green bell pepper
2 Tbsp minced fresh dill weed
1/2 tsp minced fresh garlic
1/4 tsp cracked pepper, or 3-4 drogs hot pepper sauce

Instructions:
Skin trout and whitefish and cut into bitesized pieces. In a glass or stainless steel bowl combine fish with lime and lemon juice and salt. Stir until salt is dissolved. Add the rest of the ingredients and stir well to mix. Cover and refrigerate for 24 hours, stirring several times. Remove from brine and serve, or may be stored tightly covered for several days.
