Cinnamon Mornings and Chocolate Dreams

Yield: 2 dozen 

Ingredients:
1- 15oz can unsweetened pumpkin
2 cups firmly packed brown sugar
1 cup butter, melted
4 large eggs
1/2 cup apple juice
3 1/2 cups flour
2 tsp baking soda
2 tsp baking powder
4 tsp ground cinnamon
5 tsp ground ginger
1 tsp grated nutmeg
1/2 tsp ground cloves
1 cup crystallized ginger, finely chopped

Instructions:
Grease 24 muffins cups. In a large bowl combine the pumpkin, brown sugar, and butter, and stir until blended. Add the eggs and mix until smooth. Add the juice. In a separate bowl, sift the flour, soda, baking powder, cinnamon, ginger, nutmeg, and cloves. Gradually stir the dry ingredients into the pumpkin mixture. Mix until thoroughly combined. Fold in the chopped ginger. Fill the prepared muffin cups 2/3 full. Bake in a 350 degree F oven for 20-25 minutes.
