Ingredients: 1 slice per guest of Black Forest or Virginia Ham 1 egg per guest about 1/4 cup per guest of any vegetable: zucchini, summer squash, mushrooms, onions, red/green pepper, or your choice fresh or dried tarragon 1 tablespoon per guest sour cream 1/2 stick butter Pepper to taste Instructions: Preheat oven to 450F. Spray a regular size muffin tin well with cooking spray. Cut up all of your different vegetables into small pieces; saute them in the butter with tarragon and pepper to taste until they are tender. When vegetables are tender, stir in sour cream. Take one slice of ham and fit it into each muffin tin, making a nest. Put about one tablespoon of the vegetable mixture into each ham nest. Crack each egg and place on top of the vegetables. Garnish with tarragon and bake for about 15 minutes until yolks are hard. If you like the yolk runny, bake less. (When feeding the public it is required to cook the yolk longer). Remove from tin and serve on separate dishes with english muffins or fresh biscuits. Notes: A wonderful easy, very impressive dish. It can be used for one to many guests. |
