Yield: 2 servings 

Ingredients:
2 fresh, ripe peaches, peeled and sliced (or frozen non-sweetened peaches)
1 Tbsp sugar
1/2 cup apple juice
1 Tbsp lemon juice
few drops of vanilla extract
1/2 cup plain yogurt

Instructions:
Save two peach slices for garnish. Place remaining peaches, sugar, apple juice, lemon juice and vanilla in blender. Puree untl smooth. Lightly whip yogurt and add to the soup. Chill before serving. Try substituting fresh ripe melon for the peaches for a different taste.
