Cinnamon Mornings and Chocolate Dreams

Ingredients:
1/4 cup apple juice
1/4 cup sugar
1/8 tsp ground cinnamon
3/4 cup fresh cranberries
3/4 cup unsweetened applesauce
3 ripe Kiwifruits, peeled and sliced
1 cup fresh pineapple chunks
1 -11oz can mandarin orange sections, drained
1 -8oz carton vanilla-flavored yogurt
1/8 tsp ground cinnamon or nutmeg

Instructions:
In a saucepan, combine apple juice, sugar and 1/8 tsp cinnamon. Cook until sugar dissolves. Add cranberries; bring to boiling, reduce the heat. Cook and stir for 3-4 minutes or until berries pop. Remove from heat and stir in applesauce. Cover and chill for 30 minutes.

In a 1/2 quart clear serving bowl, arrange the kiwi around bottom and continue by pressing up the sides of the bowl. Spoon the chilled cranberry mixture over the kiwi slices. Top with pineapple chunks and mandrain orange sections. Spread yogurt over the top of the fruit mixture. Sprinkle with remaining 1/8 tsp. cinnamon or nutmeg. Chill for 2 to 4 hours. To serve, gently fold yogurt into mixture and spoon into parfait stemware.
