Cinnamon Mornings and Chocolate Dreams

Ingredients:
1 cup sugar
1 1/2 cups flour
1/4 tsp salt
1/2 tsp baking powder
1 tsp baking soda
1/2 cup soft shortening
1/2 cup milk
1 egg
2 cups peeled and finely chopped apples (Granny Smith or Roman)

Topping:
1/2 cup brown sugar
2 Tbsp soft butter or margarine
2 tsp flour
2 tsp cinnamon

Cream together all ingredients. Spread evenly over coffeecake batter. Bake at 350 degrees for 30 minutes or until a toothpick inserted in the center comes out clean. Or, in a convection oven, bake for 35 minutes at 300 degrees. Serve warm.

Instructions:
Sift dry ingredients into a large mixing bowl. Add all other ingredients and blend on medium speed until well blended. Pour into greased 9"x 9" baking pan or a round pie plate.

For a larger coffeecake:
Add half again the ingredients, pour into a 9"x 13" pan and cook for 40 minutes.
