Orange Blueberry Bread Recipe

Ingredients:
1 1/2 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 cup butter, room temp
3/4 cup sugar
2 large eggs
grated zest of 1 large orange
1/2 cup fresh orange juice
1 Tbsp vanilla
1 cup blueberries
1/3 cup orange juice
1/3 cup sugar

Instructions:

Preheat oven to 350 degrees. Coat 9x5x3 inch loaf pan with vegetable spray. Thoroughly mix flour, baking powder, and salt in medium bowl. Cream butter and sugar in large bowl of electric mixer for 3 minutes or until light and fluffy. Beat in eggs one at a time, then orange zest, 1/2 cup orange juice and vanilla. On low speed, blend in dry ingredients for only a few seconds or until not quite combined. Fold in blueberries with rubber spatula just until combined. Do not overmix.

Spoon batter into prepared pan, smoothing it on top. Bake for 1 hour or until tester comes out clean. Meanwhile, stir 1/3 cup orange juice and sugar until sugar is dissolved. When bread is removed from oven, pierce top in several places with toothpick. Stir orange glaze and slowly drizzle over bread. Allow cooling in pan for 20 minutes. Turn out onto rack and serve warm or at room temperature.
