4 ounces of diced cooked ham

In a medium bowl combine by hand -
2 cups Bisquick
1 egg
1 tbsp. sugar
2 ounces of shredded sharp Cheddar cheese
2/3 cup milk

Instructions:
In a skillet saute the carrot, celery and onion in the butter until tender but not brown. Cool. Stir in diced ham and set aside.

Pre-heat oven to 400 degrees. Fill greased muffin pans 2/3's full with the biscuit batter. The batter should be thick enough for you to be able to make an indention in the middle with a spoon. Add a small amount of the ham mixture where you have made the indention. Bake at 400 degrees until brown (about 16-18 minutes.)
