Ingredients: 1 lb Brie, chilled 2 Tbsp minced fresh parsley 2 Tbsp freshly grated parmesan or romano 4 sun-dried tomatoes packed in oil, drained, reserving 1 Tbsp of the oil, then mince tomatoes 6 cloves of garlic, minced and mashed to a paste 1 tsp dried basil, crumbled crackers Instructions: Remove rind from Brie and put the brie on a serving plate. In a small bowl combine the parsley, cheese, tomatoes, garlic and basil. Add the reserved oil and combine. Spread the mixture over the brie and let it stand one hour before serving. Serve with crackers or party rye. |
