Cinnamon Mornings and Chocolate Dreams

Ingredients:
Soak in hot water 30 minutes, then drain:
1/2 cup raisins & 1/2 cup chopped dates

Stir together:
4 cups flour
2 cups sugar
1 Tbsp plus 1 tsp baking powder
1 Tbsp plus 1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt

Beat 6 large eggs with 1 1/2 cups vegetable oil, then fold in flour mixture above.

Toss together:
4 cups grated carrots
2 large grated apples
1 cup slivered almonds
1 cup coconut


Instructions:
Fold into the batter along with soaked and drained raisins and dates. Fill muffin cups 2/3 full.

Bake @ 350 degrees for 20 to 25 minutes. I try not to make a huge muffin as people are apt to leave some of it. Sometimes I start with minature muffins. Then I can add an additional choice to the plate of goodies.
