Ingredients: 3 eggs
2 ounces basil pesto (fresh basil, garlic, parmesan cheese and olive oil mixed
in blender)
3 strips roasted red peppers
6-8 kalamata olives, cut in half
2 ounces crumbled feta cheese
Instructions: Make a fluffy omelette (putting the eggs in a blender for a few seconds before cooking makes omelettes fluffy) and stuff it with the last four
ingredients.
Delicious! Serve with fresh fruit, homefried potatoes, a croissant with butter and jam and a tall glass of juice.
