Yield: 1 dozen 

Ingredients:
1 large lemon
1 section ginger root (3 inch)
1 1/2 cups sugar
1 stick butter
2 large eggs
2 cups flour
1 teaspoon baking soda
1 cup plain yogurt

Instructions:
Carefully peel the lemon and the ginger root. Discard ginger root peel. Cut ginger root and lemon peel into several pieces; place in food processor fitted with steel blade. Add 1/2 cup sugar and process. in a large bowl, beat softened butter and 1/2 cup sugar. Beat in eggs. Add processed ginger root and lemon peel mixture. In another bowl, mix flour and baking soda. Fold flour and yogurt into lemon-egg mixture. Spoon into greased 12 cup muffin pan. Bake in 375 degree oven about 20 minutes. Squeeze the lemon juice from the peeled lemon. Brush onto muffin tops after they are baked. Sprinkle remaining sugar on each muffin.
