Cinnamon Mornings and Chocolate Dreams

Yield: 10 servings 

Ingredients:
3 cans of sliced peaches
1 cup granulated sugar
1/2 cup flour
Grated orange peel from one orange
3/4 cup orange juice
1/2 cup melted butter
1/2 teaspoon cinnamon
12 egg whites
1 1/2 loaves of bread, cut in triangles, with crusts removed
Turbinado sugar to sprinkle on top before cooking

Instructions:
Preheat the oven to 375°F. Spray one 13"x9" pan (largest one) and one 9"x9" (square) with non-stick vegetable spray.

Combine and whisk the orange peel, orange juice, 1/2 cup melted butter, 1/2 teaspoon cinnamon and 12 egg whites.

Mix the peaches, 1 cup sugar and 1/2 cup flour together and spread evenly in the two pans that have been sprayed with non-stick coating.

Dip the bread triangles in the whisked egg mixture and place on top of the peaches.

Pour remaining egg mixture evenly on top of the bread in each dish to add more flavor. Before putting in the oven, sprinkle with turbinado to give the cobbler a nice crunch to the topping. (do not replace with granulated sugar it is not as good!)

Cook for approximately 40 minutes or until golden brown. Serve warm, topped with vanilla ice cream if you wish.
