Ingredients: l pound bulk sausage 1 teaspoon butter 8 sliced mushrooms 1 medium chopped red onion 12 beaten eggs 1 cup milk 1/2 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon oregano 8 ounces shredded mozzarella cheese 2 medium tomatoes, chopped Preheat oven to 400 degrees. Grease a 13x9x2-inch baking pan. Crumble and brown sausage in a skillet. Drain well. Spread sausage in baking pan. Add butter to the same skillet; melt and saute mushrooms and onion. Add to the sausage in the baking pan. Blend remaining ingredients together in a large mixing bowl. Pour this mixture over the sausage and onions.
