Cinnamon Mornings and Chocolate Dreams

Yield: 1 loaves 

Ingredients:
1 cup whole wheat flour
1 cup all-purpose flour
1/4 cup wheat germ
1/2 teaspoon salt
1 teaspoon baking soda
1 1/2 cups mashed ripe banana
1/2 cup vegetable oil
1/4 cup sugar
1/4 cup brown sugar
2 eggs, lightly beaten
1 teaspoon vanilla extract
1/2 cup diced dried apricot
1/2 cup pecans, chopped

Instructions:
Combine the first five ingredients in a large mixing bowl. Combine the bananas, oil, sugars, and eggs and beat well. Stir in vanilla. Make a well in the center of the dry ingredients; add the banana mixture and stir just until mositened. Fold in the pecans and apricots. Spoon the mixture into a greased and floured 9 x 5 x 3 inch pan. Bake at 350 degrees for 1 hour or until a wooden pick inserted in the center comes out clean.
