Cinnamon Mornings and Chocolate Dreams

Yield: 2 servings 

Ingredients:
3 Eggs
½ pint of Cottage Cheese
2 ounce Swiss Cheese
1 to 2 ounces of Feta Cheese (depend on your taste)
2 tablespoons of butter -melted
1/4 package of frozen chopped spinach
1/4 teaspoon of nutmeg

Creamy Cheese Sauce:
1 Tablespoons of butter
1 ½ tablespoons of flour
1 cups of milk
1 cups grated Jack Cheese

Instructions:
Combine cottage cheese, Swiss and Feta cheese. Beat eggs with the nutmeg and butter and add to the cheese mixture. Thaw the frozen spinach and squeeze as much of the water out as you can before adding it to the mixture. Mix well so the spinach is throughout the cheese mixture. Spray ramekins with butter flavored cooking spray and turn the mixture into the ramenkins.

Bake at 350 degrees for 60 min. Serve hot with Creamy Cheese Sauce or you can substitute a Knorr Hollandaise Sauce Mix.
