Cinnamon Mornings and Chocolate Dreams

Ingredients:
1 ½ cups all purpose flour
½ cup sugar
3 teaspoons baking powder
1/4 teaspoon salt
1 cup regular wheat germ
2 small mashed bananas
½ cup orange juice
1/4 cup oil
2 eggs
1 orange

Instructions:
Grease 8 large muffin tins. In a bowl mix together the dry ingredients. In a second bowl mix together all the wet ingredients except the orange juice. Next, peal the orange and cut the rind into very small pieces. Slice the orange into small pieces. Add the orange and the rind to the wet ingredients and mix thoroughly. Combine the wet ingredients into the dry ingredients and mix thoroughly. If the mixture seems dry add the orange juice slowly until the desired consistency is achieved. Use a ½ cup measure and transfer the mixture into the prepared muffin tins. Sprinkle with muffin topping mixture. Bake at 350 degrees for 20 to 25 minutes. At the end of 25 minutes test the muffins to see if they are done. If necessary cook for an additional couple of minutes.
