Cinnamon Mornings and Chocolate Dreams

Ingredients:
5 large eggs
3 cups sugar
1 1/2 cups canola oil
1 3/4 cups flour
6 tablespoons cocoa
1/2 teaspoon salt
1 tablespoon vanilla
4 cups chopped pecans or walnuts

Instructions:
Beat together the eggs and sugar until thick and lemon colored. Add the oil and beat well. Add the flour, cocoa, salt and vanilla and beat. Stir in chopped nuts.

Spray a 15 x 11 inch jelly roll pan with cooking spray. Pour batter into pan and bake at 350 degrees for 30-45 minutes, until a knife inserted into the center comes out clean. Cool before cutting. No need for baking powder or baking soda in this recipe.
