Ingredients: Batter:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/4 cup sugar
1/2 cup butter
3 eggs
1/2 cup lemon juice
1/8 teaspoon lemon extract
1/2 teaspoon powdered ginger
1 tablespoon crystallized ginger, finely chopped
3/4 cup mango, diced and drained
Streusel:
1/2 cup pecans, finely chopped
1/4 cup brown sugar
1/2 teaspoon nutmeg
Instructions: In a medium bowl, stir together the flour, baking powder and baking soda.
In another bowl, with an electric mixer, beat butter and sugar until creamy. Then add eggs one at a time. Beat until fluffy. Beat in lemon juice and lemon extract, followed by milk, powdered ginger, and crystallized ginger.
Add slowly to dry ingredients. Stir in mangoes. Set aside.
Stir together streusel ingredients. Spoon 1/2 of the batter into a well greased 9"x5" loaf pan. Sprinkle with 1/2 of the streusel. Spoon in remaining batter and top with the rest of the streusel.
Bake at 350 degrees for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean. Cool before slicing.Makes 1 9x5 loaf
