Cinnamon Mornings and Chocolate Dreams

Ingredients:
3 cups all-purpose flour
2 cups sugar
1 cup cooking oil
4 eggs
3 teaspoons baking powder
1 1/2 teaspoons vanilla
1 teaspoon salt
1/4 cup orange juice

3 medium/large apples (a mixture of Rome and Macintosh is good)
1 lemon
2 teaspoons cinnamon
5 tablespoons sugar
1/4 teaspoon nutmeg

Instructions:
Preheat oven to 350 degrees.

Peel and core the apples and dice into small pieces. Sprinkle with lemon juice. Mix the cinnamon, 5 tablespoons sugar and nutmeg together and sprinkle this mixture over the diced apples. Set aside.

Beat the flour, 2 cups sugar, cooking oil, eggs, baking powder, vanilla, salt and orange juice together until smooth.

Pour about 1/4 of the batter into a well-greased 9" or 10" Bundt pan. Arrange about 1/4 of the apples around the pan, covering the layer of batter. At random, pour another 1/4 of the batter and 1/4 of the apples into the pan so the apples will be mixed throughout the cake.
Pour the remaining batter into the pan and top with remaining apples (you should have about 1/2 the original amount of apples left for topping).

Bake at 350 degrees for 60 minutes, or until golden brown. Remove from oven, even if it looks slightly underdone on top. Let stand for 5 minutes and then turn out of pan to cool.Makes 1 9" or 10" Bundt cake.
