Cinnamon Mornings and Chocolate Dreams

Yield: 1 loaves 

Ingredients:
3 cups flour
1/2 cup pine nuts
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground pepper
3 tablespoons tomato paste
1 egg
1/2 cup grated Parmesan cheese
2 teaspoons baking powder
1 teaspoon each of crushed dried basil, thyme, and rosemary
1 1/2 cups buttermilk
1/4 cup vegetable oil

Instructions:
Preheat oven to 350°F. Grease and flour a 9"x5" loaf pan. Combine flour, Parmesan cheese, pine nuts, baking powder, baking soda, herbs, salt and pepper in a large bowl.

Whisk together buttermilk, tomato paste, oil and egg in a medium bowl. Add to flour mixture; stir until well combined and no traces of flour remain.

Spoon batter into prepared pan. Bake for 50 minutes or until a wooden pick inserted in the center comes out clean. Cool on wire rack 10 minutes. Remove from pan and cool completely.
