Ingredients: 1 cup dried cherries
1 cup red onion, chopped
1 tablespoon minced fresh ginger
1/2 cup minced fresh lovage
2 cups packed light brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground allspice
7 cups chopped rhubarb
1 1/2 cups peeled, cored and chopped apples
3 garlic cloves, minced
1 teaspoon coriander seeds
1 cup red wine vinegar
1 teaspoon ground cloves
Instructions: Combine all ingredients in an 8-quart non-aluminum pot. Heat to boiling, stirring constantly. Reduce heat to a simmer and cook for about 1/2 hour, stirring frequently. Spoon into freezer containers and freeze.
