Cinnamon Mornings and Chocolate Dreams

Yield: 2 dozen 

Ingredients:
1-1/2 cups flour
1 tablespoon vinegar
1 cup sugar
1 teaspoon vanilla
1/4 cup unsweetened cocoa
8 ounces cream cheese
1 teaspoon baking soda
1/3 cup sugar
1/2 teaspoon salt
1 egg
1 cup water
1/8 teaspoon salt
1/3 cup vegetable oil
6 ounces chocolate chips

Instructions:
Combine first 5 ingredients, mixing well. Stir in water, oil, vinegar, and vanilla. Spoon batter into muffin pans that have been sprayed with non-stick spray. Fill cups about 2/3s full.

Combine cream cheese and 1/3 cup sugar, creaming until light and fluffy. Add egg and salt beating well; stir in chocolate chips. Spoon 1 heaping teaspoon cream cheese mixture into center of each cupcake. Bake at 350 for 30-35 minutes. Cool in pan about 10 minutes. Remove to wire racks to completely cool. Can be made in minature tins. If you make minature muffins you might want to use minature morsels as well.
