Ingredients: 1 pound fresh asparagus 3/4 cup butter 3/4 cup flour 4 cups milk 1 can (14.5 ounce) chicken broth 1 pound cubed fully cooked ham (optional) 1 cup shredded cheddar cheese 8 hard-cooked eggs, sliced 1/2 teaspoon salt 1/8 teaspoon cayenne pepper 12 biscuits, warmed Instructions: Cut asparagus into 1/2 inch pieces and cook in boiling water until tender (5 minutes). Melt butter in a saucepan; stir in flour until smooth. Add milk and broth and bring to a boil. Cook and stir for 3 minutes. Add ham and cheese and stir until cheese boils. Add eggs, salt, cayenne pepper and cooled asparagus. Heat through, then serve over biscuits. |
