Cinnamon Mornings and Chocolate Dreams

Ingredients:
Muffins:
2 cups unbleached white flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs lightly beaten
1 1/4 cups yogurt
1/4 cup unsalted butter, melted and cooled
1/4 cup sugar
1 tablespoon grated lemon zest
1 tablespoon finely chopped candied ginger

Glaze:
Juice of one lemon
1 tablespoon sugar

Instructions:
Preheat oven to 375°F. In a bowl, whisk flour, baking powder, baking soda and salt. In a separate bowl, whisk together eggs, yogurt, butter, 1/4 cup sugar, ginger and lemon zest. Add the flour mixture and fold until just combined. Spoon into a greased muffin tin (makes 16 2" muffins) and bake for 19 minutes.

While muffins are baking, mix lemon juice and sugar. When muffins are done, remove from the oven and brush lemon sugar mixture over them. Let the muffins cool in the tin for 3 minutes, then remove and serve.
