Ingredients: Batter: 2 eggs 1/4 teaspoon salt 2/3 cup fresh orange juice 2 tablespoons Grand Marnier (optional) 1 cup corn flake crumbs 3 teaspoons grated orange rind (reserve 1 tsp for garnish) 3 tablespoons sweet butter for frying 8 - 3/4" slices of day-old french bread Syrup: 1 cup Vermont maple syrup 1/4 cup fresh orange juice 1 teaspoon grated orange rind 4 tablespoons sweet butter Instructions: Combine eggs, salt, orange juice, and Grand Marnier with a whisk. Combine cereal crumbs with 2 teaspoons grated orange rind. Dip bread into egg/orange juice mixture, then dip in bread crumbs. Coat each bread slice evenly on all sides. Brown on both sides in butter; drain on paper towels. Combine syrup ingredients in saucepan; simmer 5 minutes. Arrange french toast on warm plates, and lightly dust with reserved 1 teaspoon grated orange rind. Serve with warm syrup. Comments: Little kids and big kids love French Toast. Our diet-conscious guests put aside their self-control when we serve this dish, usually with a side of hot, crisp bacon. |
