Cinnamon Mornings and Chocolate Dreams

Yield: 2 cups 

Ingredients:
1 large, firm banana, slightly underripe, peeled and diced
½ cup each red, green, yellow bell peppers, seeded and diced
3 tablespoons chopped fresh cilantro
2 scallions, chopped
2 tablespoons fresh lime juice
1 tablespoons brown sugar
2 teaspoons minced ginger root
2 teaspoons olive oil
1 teaspoon minced scotch bonnet (aka habanero) pepper, seeded (or to taste. You may substitute 2 tsp minced jalapeno)
Salt to taste

Instructions:
Mix ingredients, taste and adjust seasonings. Serve within one hour. this is H O T...better keep some milk nearby.

Comments: While visiting with friends living on Montego Bay, Jamaica, we were introduced to grilled shrimp accompanied by this great salsa. It's also perfect served with a Mexican seafood omelette. For the capsicum addict.
