Cinnamon Mornings and Chocolate Dreams

Ingredients:
1 lb butter
5 cups sugar
8 cups flour
5 tsp baking powder
1 1/2 tsp salt
8 oz Bran
2 oz Grapenuts
5 medium eggs
7 1/2 cups buttermilk
4 Tbsp baking soda
1/4 cup boiling water

Instructions:
Melt butter. Sift together: sugar, flour, baking powder, and salt. Add bran and grapenuts and mix well in large bowl. Beat eggs in another large bowl. Add buttermilk and beat well. Add melted butter. Add boiling water to baking soda and pour into other liquid. Add liquids to dry ingredients. Stir just enough to blend.

For mini muffins: Preheat oven to 425 degrees. Bake in lightly Pam sprayed pans for 12 minutes.
For regular muffins: Preheat oven to 425 degrees. Bake in lightly Pam sprayed pans for 20-25 minutes.

Note: The unbaked mixture will keep for up to 6 weeks in tightly covered containers, refrigerated.
