Cinnamon Mornings and Chocolate Dreams

Yield: 6 servings 

Ingredients:
1 refrigerated pie crust
˝ package frozen chopped spinach
4 ounces mushrooms, sliced
Sliced zucchini
Sliced yellow squash
4 ounces Swiss cheese, grated
12 eggs
2 ˝ cups heavy cream (this is essential- do not use milk or half & half - quiche will not be as fluffy)
1/8 teaspoon garlic powder
Mixture of 3 cheeses for topping

Instructions:
Sauté vegetables in olive oil and garlic. Put pie crust in bottom of pie pan, crimp edges. Put grated Swiss cheese on bottom of pie crust. Spread vegetable mixture on top of cheese. Beat eggs with cream and pour over vegetables. Bake at 375°F for 45 minutes or until done. Top with additional grated cheese and bake for an additional 10 until lightly browned.
