Ingredients: 3 cups all-purpose flour 2 teaspoons baking powder 1/3 teaspoon salt 1 cup sugar (or a little less) 1/4 pound (one stick) chilled, unsalted butter 3 eggs 3/8 cup heavy cream 2/3 cup currants Instructions: Mix together dry ingredients in a large bowl. Using a pastry cutter, cut the cold butter into the flour mixture until the mixture resembles a very coarse meal. Beat eggs with cream until just combined and add to flour/butter mixture. Mix gently until all ingredients are just combined. Stir in currants. Portion dough in 12 pieces and place on baking sheets. Bake at 400 for 20 - 25 minutes. |
