Cinnamon Mornings and Chocolate Dreams

Yield: 6 servings 

Ingredients:
6 eggs
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1 cup cottage cheese (8 ounces)
2 cups Monterey Jack or Colby Jack, grated
4 ounces Feta cheese, crumbled
1 jar (6 ounces) marinated artichoke hearts, drained and chopped

Instructions:
Preheat oven to 400 degrees. Combine all ingredients in a large bowl. (I usually sift the flour and baking powder into the eggs and whisk for a smoother consistency before adding other ingredients).

Spray six custard cups with vegetable spray and divide mixture equally into them (about 1/2 cup each). Sprinkle with paprika for color and bake at until golden, 25 to 30 minutes. Serve immediately with toast, roasted potatoes or scones.
