Ingredients: 5 cups flour 1 tablespoon sugar 2 teaspoons salt 3 teaspoons baking powder 3 1/2 cups milk 1 1/2 cups half & half, half milk, half cream 6 eggs Instructions: Mix dry ingredients in one bowl. In separtate large mixing bowl add milk, half & half, egg yolks and beat; slowly add dry ingredients. Keep beating until very smooth and glossy. Whip egg whites until stiffly beaten and fold into batter mixture. Preheat Ebelskiver pan w/ teaspoon oil in each cup. When pan is hot, fill cups just under full. Once all cups are filled start turning pancakes. Each turn will be small, pour uncooked batter to bottom of pan and slowly form sphere. Last turn should pour our remaining batter and close up the hole. Serve with syrup or jam or cold with sugar. |
