Cinnamon Mornings and Chocolate Dreams

Whether you're hosting a formal get-together or need a quick brunch idea, this book will spark your imagination and your appetite.

Ingredients:
4 Empire Apples
2 quarts Water
1 tablespoon lime juice
3 tablespoons yogurt (or soy yogurt)
1/4 teaspoon cinnamon
2 teaspoons Massachusetts Maple Syrup
scant 1/8 teaspoon nutmeg
scant 1/8 teaspoon allspice

Instructions:
Bring water and lime juice to a boil. Core apples and peel top 1/3 of each apple. Reduce heat and drop apples in water and lime juice. Simmer, Do NOT boil, until tender (approximately 7 minutes). Blend yogurt, cinnamon and Massachusetts maple syrup until smooth (by hand). Place each apple in a desert bowl, dress with sauce, and dust with nutmeg and allspice. Serve while hot.

Comments:
Many substitutions can be made. Try honey instead of maple syrup sometime. For a savory Indian flair replace the spices listed above with tumeric, paprika and ginger. The possibilities are limitless.
