Ingredients: 1/3 cup diced onion 2 tablespoons butter 3 cups mashed potatoes 4 cups bread cubes 3 beaten eggs 1/2 teaspoon garlic powder 1/2 cup grated cheddar cheese 1-2 cups milk Instructions: Saute the onion in butter until the onion is transparent. Mix bread cubes, mashed potatoes(instant mashed potatoes work fine), eggs, sauteed onion and garlic powder. Add milk until the mixture resembles a thick soup. Sprinkle cheese on top. Bake in a 9" x 13" greased casserole at 350 degrees for 45 minutes or an hour until the top is brown and the potatoes are set. Comments: This is my mother-in-law's version of "stuffing". Although technically you could never stuff a bird with this recipe because it is quite runny before it is baked, we prefer it to a drier stuffing and use it as a side dish for our holiday meals. |
