Ingredients: 2 1/2 cups warm water 1 1/2 packet active dry yeast 2 tablespoons sugar 2 tablespoons unsweetened applesauce 6 1/2 to 7 cups all-purpose flour Cornmeal for pan Instructions: Add warm water to large bowl then add yeast and sugar. Let stand approx. 5 minutes to "proof" yeast. When yeast starts clumping, add remaining ingredients. Knead until smooth and elastic. Cover with a clean towel and let rise in a warm place until double in bulk (approx. 30 to 45 min.). Punch down and shape into 2 loaves. Spray French bread pan with non-stick spray and then sprinkle with cornmeal. Put loaves in pan and gash loaves about 1/4 inch deep every 2 inches. Cover with towel and let rise about 1/2 hour. Bake at 350 F for 40 to 45 minutes. Brush tops lightly with butter. Cool on wire rack or serve immediately (best). Comments: I especially make this when I need to "vent" as slamming the bread on the hard surface during kneading is good for the bread. |
