Ingredients: 6 corn tortillas 12 eggs, room temperature 1 1/2 cup milk 2 1/2 cup shredded mild cheddar cheese smallest can of diced chiles Instructions: Preheat oven to 350. Spray cooking dishes with Pam. Place tortilla in bottom of 6" individual casserole dish. Sprinkle cheese on top of tortilla. Place diced chiles on top of eggs (approx. 1 teaspoon per serving or to taste). Beat eggs on high speed of blender for one minute. Add milk, beat about 15 seconds. Gently pour egg mixture over ingredients already in dish. Bake at 350 for approximately 30 minutes, 'til puffy. Serve topped with fresh pineapple salsa and sour cream, chocolate or banana muffins (or cornbread) and fruit on the palte. |
