Yield: 6 servingsInactive Prep Time: 24 hr

Ingredients:
Wild boar:
oil
lard
salt
pepper
hot red pepper
2 tablespoon tomato purče.

Marinade:
1 liter black wine
parsley
bay leaves
onion
rosemary
carrots
pennyroyal
sage
fennel

Instructions:
Cut the wild boar into pieces and wash them several times. Preapare the marinad, boiling, wine and the aromatic herbs for 5 minutes.

Leave the wild boar to marinate for 24 hours. In a large pan, put abundant oil, butter and lard in the same quantities. Fry the wild boar with fresh aromatic herbs, salt, pepper, and tomato sauce. Leave them brown for 15 minutes. In the meanwhile, run the marinate through the vegetable-mill. Add the sauce to the praparation and leave it cook until done.
