Cinnamon Mornings and Chocolate Dreams

Ingredients: 6 eggs, room temperature 1 1/2 cups milk 1 1/2 cups unbleached flour Apple- 1/2 stick butter (4 tablespoons) 2 medium cooking apples, unpeeled, sliced thinly 2 tablespoons brown sugar 1 teaspoon cinnamon 6 red hots (optional) Melt butter in a pan. Stir in sugar and spices. Gently fold apples into mixture. Microwave on high for 5 minutes; stir. Spoon into center of dutch baby. Put topping of choice on top and serve. Peach- 1/2 stick butter (4 tablespoons) 4 medium peaches, unpeeled, sliced thinly 2 tablespoons sugar 1 teaspoon cinnamon 1/2 teaspoon nutmeg Melt butter in a pan. Stir in sugar and spices. Gently fold peaches into mixture. Microwave on high for 5 minutes; stir. Spoon into center of dutch baby. Put topping of choice on top and serve. Instructions: Preheat oven to 425 degrees. Spray individual casserole dishes with pam. Beat eggs on high speed of blender for 1 minute. Slowly add milk, then flour, beating another 30 seconds after all ingredients are in. (cooks note: this step is best done the night before). Bake at 425 for approx. 30 minutes. Top with powdered sugar and fill with fruit topping. Top with low-fat vanilla yogurt, whipped topping, or whipping cream. Serves 4. Fruit Fillings for Dutch Babies: Banana- 4 large, ripe bananas, peeled 2 1/2 teaspoons cinnamon 1/4 teaspoon nutmeg 2 tablespoons brown sugar 1 cube butter (8 tablespoons) 1 tablespoon lemon juice 2 teaspoons banana extract Melt butter in a pan. Stir in spices, sugar, and lemon juice. Slice bananas, fold into mixture. Add extract last. Microwave on hgih for 1 minute. Stir. Spoon into center of dutch baby. Put topping of choice on top and serve. |
