Ingredients: 50g fresh yeast 18 fl. oz water 2 tblsp potato flour 3 tblsp oil 1 tsp salt approx. 42 fl. oz plain flour Garnish: Potato flour Instructions: Mix together 14 fl. oz of the water and the potato flour in a saucepan and heat to boiling point whilst stirring. Let the mixture cool (37 degrees C). Dissolve the yeast in 100 ml tepid water, add the potato flour mixture, salt and oil and most of the flour and knead until the dough is fairly soft and pliable. Cover and leave to rise for approx. 30 minutes. Knead the dough once more, divide it into 16 pieces and make into oblong rolls. Cover the rolls with potato flour and leave them to rise for approx. 30 minutes. Heat the oven to 225 degrees C and cook the rolls in the centre for 12 – 15 minutes. Notes: These rolls have a light texture. They are usually a big hit with our guests and taste wonderful with butter and home made orange marmelade! |
