Ingredients: 1 kg tomatoes 2 onions 2 cloves garlic (I use one whole garlic) Oil for frying 500 ml water 2 vegetable stock cubes 1 tsp dried basil or 2 tblsp fresh 2 tblsp chili sauce 1 tblsp tomato puree a little bit of paprika or ground chili (to taste) to serve crème fraiche or soured cream a little fresh, chopped basil. Instructions: 1. How to peel the tomatoes: Bring some water to the boil in a saucepan. Cut a cross in the flat end of the tomatoes and leave them in the boiling water for about one minute. Plunge them into cold water. They should now be easy to peel and chop. 2. Peel and chop the onions and garlic. Fry them in a little oil until they are soft. Add the chopped tomatoes, the stock cubes in the water, and the dried basil (fresh basil is added at the end). Put a lid on the saucepan and cook for approx 10 minutes. 3. Liquidize the soup. Add chili sauce, tomato pure and ground paprika or chili to taste. 4. Serve wit a bit of soured cream/crème fraiche and a little chopped basil. Notes: This is a very fresh tasting soup. |
