Ingredients: 1 cup sugar 4 cups flour 1 teaspoon salt 2 teaspoons baking powder 1 cup butter, chilled 1 egg 1 cup milk 2 cups fresh blueberries, blackberries, raspberries or sliced peaches Instructions: Combine first 4 ingredients. Cut the butter into 1/2" cubes and distribute over the flour mixture. With a pastry blender, cream until mixture resembles coarse crumbs. In a small bowl, stir together the egg and milk. Combine egg mixture with flour mixture. Carefully fold in your choice of fresh berries or peaches. Lightly butter a cookie sheet. Divide dough and form into six triangular scones. Set oven rack on second from top of oven. Bake at 325F for 18-20 minutes, until toothpick comes out clean. Notes: These are the world's best scones! |
