Ingredients: 1/2 cup all-purpose flour 1 cup milk 2 tablespoons margarine or butter, melted 1/2 teaspoon salt 4 eggs 1 cup coarsely chopped deli ham 2 green onions, chopped 1-1/2 cup shredded swiss cheese (6 ounces) 1 cup chopped fresh spinach Instructions: Heat oven to 350°F. Line jelly roll pan, 15-1/2 x 10-1/2 x 1", with aluminum foil. Generously spray with Pam. In a bowl, melt margarine, add 1/2 the milk and all the flour and blend with pastry whip until all lumps are gone. Beat in remainder of milk, salt and eggs until well blended. Pour into prepared pan. Sprinkle with ham and green onion. Bake until eggs are set, 15 to 18 minutes. Remove from oven and immediately sprinkle with chees and spinach. Starting at the narrow end of the pan, use the foil to lift and roll the omelet. Arrange additional spinach leaves on the serving plates. Cut omelet into 8 slices and set 2 slices on each prepared plate. Serve with toast fingers for a visually delightful and tasteful breakfast. Notes: This recipe is not difficult at all as long as you have the proper jelly roll pan for baking. I guarantee you'll receive a "Wow!" response. |
