Ingredients: 12 very thin but not shaved slices of Black Forest Ham
8 eggs
1 1/2 cup half & half or light cream
1/2 tsp. lemon pepper
1/2 tsp. onion powder
1/2 tsp. garlic powder
6 ounces shredded sharp cheddar cheese
Instructions: Preheat oven to 325 degrees. Spray nonstick muffin pan very lightly with vegetable oil spray. Place ham slice in each muffin cup to form basket. Beat eggs, cream and seasonings in bowl with mixer or stick blender. Pour egg mixture into large measuring cup with spout. Fill ham baskets about 3/4 full with egg mixture. Sprinkle heaping tablespoon of cheese on top of each basket. Bake 30 minutes or until toothpick comes out clean.
Notes: Nice served on plate with buttered croissant or muffin and fresh fruit arrangement.
