Ingredients: 1 package Buttermilk pancake mix 2 or 3 Granny Smith apples 1 cup applesauce 1/2 cup creme fraiche Instructions: 1) Mix batter according to directions provided. 2) Core and slice apples into circles. 3) Fill a heavy cast iron skillet with an inch or two of olive oil or canola oil. Get the oil good 'n hot until a few drops of water sizzle when dropped in the oil. 4) Dip apple slices in the batter until both sides are nicely coated. Shake off any excess batter. 5) Fry on both sides until nicely golden. To serve, puddle a generous heap of applesauce onto plate. Layer two or three fritters on top and dollop a spoonful of creme fraiche. Notes: Serve with sausage and await the 'oohs' and 'ahs'. |
