Cinnamon Mornings and Chocolate Dreams

Cook Time: 5 minPrep Time: 15 min
Yield: 6 servingsInactive Prep Time: 20 min

Ingredients:
2 cups flour
1/2 tsp salt
1 Tbs baking powder
1 tsp ground cinnamon
2 tsp sugar
3 eggs
1/2 cup vegetable oil
1 cup milk
1 Granny Smith apple, peeled & grated

Instructions:
In a medium bowl, whisk together the flour, salt, baking powder, cinnamon and sugar. In a bowl, beat the eggs until thick (about 4 minutes). Add the oil, milk and grated apple. Add the wet ingredients to the flour mixture and stir until the batter is just combined. Lumps are okay. The batter will be thick, thin with a little milk if needed for your waffle iron. Let batter rest for 20 minutes if possible.

Cook in belgian style waffle iron according to the manufacturer's instructions. Serve with a dollop of chunky applesauce and a sprinkle of ground cinnamon along with the maple syrup.
