Ingredients: 4 ripe, but firm, red pears 1/2 cup dark brown sugar 1/8 teaspoon ground cardamom 1 cup orange juice Instructions: Combine brown sugar and cardamom. Sprinkle over the bottom of a baking dish which will just accommodate the pears when cut in half, usually 9x13. Cut pears in half lengthwise through the core. Using a melon baller, remove stem and core. Place cut side down onto the brown sugar. Pour the orange juice into the dish. Juice should reach about 1/4 inch up the sides of the pears. Add more if needed. Bake at 350 degrees for about 30 minutes depending on the ripeness of the pears. A thin knife or fork should enter the center of the pear with slight resistance. Serve pears warm, cut side up in a flat bowl. Spoon extra sauce over the top and garnish with a dollop of sour cream sweetened with honey, if desired. Notes: Red pears show best at the breakfast table, but other fresh pears can be substituted. The pears can be cooked the night before, covered and refrigerated. Reheat for about 15 minutes before serving. |
