Cinnamon Mornings and Chocolate Dreams

Yield: 4 servings 

Ingredients:
1/2 cup warm water
1 tbsp. active dry yeast
2 cups lukewarm milk
1/2 cup of canola oil
1 tsp. salt
1 tbsp. sugar
2 cups all-purpose flour
2 eggs, slightly beaten
1 tsp. vanilla
Pinch baking soda
1 1/2 cups sliced fresh strawberries for topping

Instructions:
The night before you want to serve the waffles, stir together in large mixing bowl water and yeast. Allow to stand 10 minutes, then stir in warm milk, canola oil, salt and sugar. With a wooden spoon or rubber spatula, beat in flour. Wrap bowl tightly with plastic and let stand overnight on counter top - do not refrigerate. The next morning, preheat well-greased waffle iron. Stir in eggs, vanilla and soda; beat well. Bake on prepared iron until golden brown. Serve at once topped with whipped cream and fresh strawberries.
