Ingredients:
1 cup canned, mashed sweet potatoes or yams, unsweetened
1 cup light brown sugar, packed
1/4 cup water
2 1/4 cup Bisquick or biscuit mix, packed


Instructions:
Preheat oven to 350°F. Grease cookie sheet.

Mix together the sweet potatoes, brown sugar, water and biscuit mix. Mixture will be very sticky. Dust countertop or cutting board with flour. Place mixture on floured surface and roll to ½ inch thick. Cut with a 1-½ inch biscuit cutter and place on greased cookie sheet, allowing some space between biscuits. Bake for 12 to 15 minutes. Cool on cooling rack before storing. The biscuits will be moist even when done. To make larger biscuits increase baking time from 16 to 18 minutes.

Notes:
Yield: 70 small biscuits

Serving suggestions: Split the biscuits and stuff with salty, shaved Virginia or country ham. One pound of ham will stuff 70 biscuits. These may be served warm or room temperature.
